Recipe Of the week:

Banana Cream Ice Cream

INGREDIENTS
• 2 young coconuts flesh and water. (Should yield 2 cups of flesh and water.)

• 3 RIPE bananas• 5 pitted dates• ½ teaspoon vanilla

•½ t. Celtic sea salt• 1 T. virgin raw coconut oil

Optional (the following adds in a malty like flavor and consistency)

• 1 T. non GMO lecithin powder

• 1 T. lucuma powder

• Dash of stevia extract

PREPARATION
Combine all the ingredients in a blender, and process until smooth and creamy. Pour into ice cream maker for 25 to 30 minutes and enjoy as a soft serve treat. You may pour it into a glass container and freeze.
****If you do not have an ice cream maker, pour into a glass container and freeze for 8 to 12 hours and enjoy. *Children LOVE to participate and witness you "Karate chop" the coconuts!!!

Dunder Mifflin Canton Branch gives wealth and beauty.

Hey Hey Everybody!!! Amazing week for the Office this week, if there is anyone reading this that hasn't watched the newest episode yet, stop reading now and don't come back until you have. I am serious!!!! I think Company picnic is going to go down as one of those Iconic episodes. I loved it from start to finish, but what are we going to do until next season....................

Recipe of the week: Taken from the food blog of our very own murdercheckerschamp!










One of my favorite summer treats (which I can eat as an entire meal) is my fresh corn salsa. On hot days I don't have much of an appetite, so it's nice to just eat some cool vegetable packed salsa. I've made it the past few summers when I'm home, and my dad now requests that I make it whenever I visit. Unfortunately, last year I made it right in the midst of the tomato/jalapeno/cilantro contamination and ended up with salmonella, which was awful. But it's still one of my favorite foods, cool and refreshing, yet flavorful and interesting. The recipe I've been making was inspired by random varieties I've found at markets, one a teammate on the swim team made, and a recipe a friend sent me a few years ago. I've been working on perfecting it for some time now. Since it's Cinco de Mayo, we are having a Mexican feast for dinner, so it's only fitting to make salsa today (one of the first things my dad said when I got off the plane was that he wanted fresh salsa), and I made a double batch since I would be home, likely eating it for every meal for the next few days. This time I made it a little different, the onions were way too strong to put in fresh salsa, and it was a little bland without onion, so I added a few shakes of cumin and it was as tasty as always. It's definitely customizable (some use avocados, vidialia onions, green onions, garlic, or red bell peppers, plus there's probably other varieties I haven't considered, also, as I mentioned you can add cumin, red pepper or chili powder), but this is the blend I like:



One can (or half a bag frozen and defrosted) corn


One can black beans rinsed and drained


One large tomato, diced


One jalapeno, minced


One green bell pepper, diced


1/2 to 1 red onion, diced


Cilantro, to taste (which for me means probably around a quarter of a cup, and I always wish there was more), finely chopped


dash salt


juice of 1/2 lime (make sure it's a nice, heavy juicy one)



Combine first seven ingredients. It's important to make sure you cut everything small enough for it to distribute evenly, this is especially important for the onion, jalapeno, and cilantro, but it's easy to cut the the green pepper too big too. Add lime juice and mix thoroughly. Add salt as needed (I like to just dip a few salty chips in to test it, and usually need very little additional salt).Also, I should probably tell you to wear gloves when you chop the jalapeno, like all responsible recipe-givers would, but I don't. I've made it enough that I'm pretty much tolerant of the capsaicin in the peppers. The heat of peppers is similar to heat in temperature, as it can physically burn you, which is why when something tastes spicy, we say it tastes hot. It's the same reaction. However, unlike the heat in the temperature sense, we can build tolerance to the heat from spicy foods (capsaicin being chemical that makes things spicy) by gradually building up the spicy food you eat. This doesn't mean that they won't be spicy, and you do have to push to a little bit of a burn (just like exercising) for it to do anything, but it makes it easier to tolerate.

Star Trek ROCKS!!!

Hey everybody. I just wanted to get on here and type something for the first time in about a month or more so I thought what better to talk about than Star Trek.
BE FOREWARNED. THERE MAY BE SOME SPOILERS
So far I have seen it twice and I plan on seeing it at IMAX when it finally gets to Spokane. Now there is a lot of debate between Trekkies (or is it Trekker? That debate is still going on...). Some absolutely hate it because they feel it violates the original cannon. Now how I see it they made it so tht they can create a new cannon without fear of having to violate the original. There are a few parts that I think the writers took the easy way out, but overall I enjoyed it very much. I agree with what Rainn Wilson said on Twitter about the ice planet part. It was used as an easy way to move the plot ahead in a way that didn't make sense and showed a lack of thought. It was way funnier than I ever expected that it could be. It is widely agreed by everyone that the actor playing Dr. McCoy was the truest to the original. Chekov with the "Wulcans" was hillarious and the best line came from Scotty when he said, "Do they have sandwiches in the future?" I look forward to seeing where this goes and I hope that the writing for future movies remains as good as it is here. The one thing I kept waiting for but never happened was I kept expecting Spock (played by Zachary Quinto, a.k.a. Sylar on Heroes) to slice the top of someones head off. I actually started calling him Spocklar :) He did very good though. There were some surprising character choices including such actors as Tyler Perry, Wynona Ryder and Jennifer Morrison. I'll let you see who else shows up for yourself. The point I am making is GO SEE THIS MOVIE. You do not have to be a Trekkie to enjoy the movie.

I thought is was awesome although the moment s between Phyllis and Dwight.....kind of creepy. Do you think Bob V is going to cheat? I guess we all have to just wait and see......I can barely contain my enthusiasm!!!!!!

Recipe of the week:


Pork Chops with No-Cook Raspberry Relish

SERVES 4


Prep Time: 15 min (plus marinating)


Cook Time: 30 min


4 pork chops (about 2 1/2 pounds)
1/4 cup apple cider vinegar
1/4 cup plus 2 tablespoons extra-virgin olive oil
1 tablespoon grated fresh ginger
2 cloves garlic, smashed and peeled
One 6-ounce container raspberries
1/4 cup finely chopped red onion
Grated peel and juice of 1 lemon
Salt and pepper


1. Preheat the oven to 350°. In a large resealable plastic bag, combine the pork chops, vinegar, 1/4 cup olive oil, the ginger and garlic; refrigerate for 20 minute.2. Meanwhile, in a bowl, mash the raspberries. Stir in the onion, lemon peel, lemon juice and 1/4 teaspoon salt.3. In a large, ovenproof skillet, heat the remaining 2 tablespoons olive oil over medium-high heat. Remove the pork chops from the plastic bag; wipe off the excess marinade and season with salt and pepper. Add to the pan and cook until golden-brown, about 3 minutes on each side; transfer the skillet to the oven and roast until an instant-read thermometer inserted into the center registers 135°, 20 to 25 minutes. Let the chops rest for 5 minutes. Serve with the raspberry relish.
